Mushroom and wombok egg white omelette

Super healthy, low fat, fitness food!! with a cup of green tea and some fruit its perfect. You could also add some avocado or a few nuts and seeds which would really balance it out but if you are trying to lose some .... weight!! as is would be perfect especially with the green tea, it's great for you metabolism and helps to make you feel full. Gotta love that!!

I know it's smothered in greens but I just can't eat anything savoury unless I cover it in a big pile of these deliciously nutrition little lovelies.

You can buy egg whites at Coles and Woolworths now. The Coles one is in the freezer and the Woolworths one can be found in the milk section in a cardboard container like the 1 litre milks. It's great if you eat a few egg whites as the yolks don't get waisted plus it fast and convenient.

Mushroom and Wombok Egg White omelette

1/2 - 1 cup Egg Whites or 1 egg plus 1/2 cup egg whites *
2-3 mushrooms chopped
1 cup finely sliced wombok cabbage
Fresh rosemary and mixed herbs
Celtic or Himalayan salt

You will need a good quality fry pan to make this. I put about 1/2 cm of water into it then add the veggies and steam them until soft making sure that the water does not completely evaporate. Then add the herbs and egg whites and leave to simmer on low heat.

While that is happening turn on the grill so that you can finish the top under it so that the bottom does not burn and the top gets nice and firm. One the bottom is cooked, pop it under the grill until finished. Slide onto a  plate, add a handful of mixed greens and sprinkle with the salt and pepper.

Note: the yolk is very nutritious so you should have it occasionally. It is high is Biotin and to many whites will deplete biotin levels .. shows you why we should eat 'wholefoods'!
