Chili chicken sausage rolls

I had some roast chicken that  needed to be used up. I roast a chook early in the week so that Mr J has fresh chicken for his school lunches. But! he had camp last week so it didn't get used and the babe was on his 'week on'. Sausage rolls are so easy to make and keep in the fridge for quick snack and meals. I always have my sugar free tomato sauce in the fridge which goes really well with sausage rolls. But I noticed that Mr J was really enjoying them by themselves, they are nice and moist.

Chili chicken sausage rolls
Makes: 6


½ cup oats
½ cup sprouted walnuts – normal are ok too
1 ½ cups left over baked chicken
1 tbs massel chicken stock
1 tsp harissa or chili chutney
1 tsp Dijon mustard
1 tsp chia seeds
1/3 cup chili cream cheese
Salt and pepper to taste
2 free range eggs
1 ½ sheets of puff pastry

  1. Add oats and walnuts to a food processor and blend until fine
  2. Add remaining ingredients and blend until smooth
  3. Let sit for 5 minutes
  4. Spoon two long sausages midway down the center of a halved sheet of puff pastry
  5. Roll the pastry over the filling making sure that they overlap and press down to seal
  6. Cut in half and place onto a baking paper lined baking tray
  7. Bake for 40 minutes
