Banana protein fudge brownies – grain free, dairy free option
These are one of those things that some people would call a failure.. but there not!! they are so soft and gooey in the center and the coconut sugar make the outside crunchy when warm and turns chewy when they are cooled. I don’t know what else to call them because they are not light like a cake but they are soft and gooey like chocolate fudge brownies.. So banana fudge brownies they are with a boost of protein powder to make them a complete meal replacement.. no grains, healthy fats and good low gi carbs!
Makes: 12 muffin tin brownies
1 cup activated almonds
2 tbs pepitas
2 tbs sunflower seeds
1 ¾ cup coconut sugar
1 scoop pea protein powder
2 tsp ground cinnamon
1 tsp vanilla powder
½ tsp ground mixed spice
1 tsp baking powder
½ tsp bi-carb soda
2 ripe bananas
1/2 cup butter, use coconut oil or olive oil for dairy free
½ cup oat, nut or dairy milk - Use nut or diary for Paleo, Oat or nut for dairy free!
2 free range eggs
- Add nuts and seeds to a high speed blender or food processor and blend until fine the add to a large mixing bowl.
- Add the remaining dry ingredients and stir with a whisk to combine everything and aerate the dry ingredients
- Add the wet ingredients to a high speed blender or food processor and blend until smooth then add to dry ingredients and fold through until thoroughly combined then spoon or pour into greased muffin tins and bake for 25 minutes or until they come away from the side of the tins. They will sink in the middle!
- Let cool before trying to attempt to remove or they will fall apart, these are very gooey in the inside and firm and chewy on the outside! Enjoy!
