Scooters at Kirra asked for some tarts the other day, they had a customer looking for something sweet and sugar free! So my little tarts to the rescue.. these are refined sugar free, gluten and grain free as well as dairy free. maybe I should have just said their Raw Vegan! that covers everything but scares some.. Oh well, you want' win everything. Their the types you don't tell and then they try them and go "Wow, Yum!".. then you tell them!
Creamy Mango & Pineapple White Chocolate Tarts
Makes: 6 x 6cm and 1x8cm tart (or 8 small)
½ cup almonds
½ cup sunflower seeds
1 cup pitted dates
1/3 cup dried coconut
½ tsp ground cinnamon
½ tsp vanilla powder or similar
1/3 cup raw cashews – soaked
7 pitted dates – soaked
¾ cup fresh pineapple
1 medium mango cheek
½ cup shaved raw cacao butter
2 tbs agave, honey, maple syrup or coconut nectar
½ tsp guar gum – optional
Add warm water to soak the cashews and dates for the filling and set aside. Using warm water helps to soften them quicker.
Add all of the base ingredients to a blender and blend until fudgy and sticky then press into tart moulds. Place them into the fridge to get firm while you prepare the filling.
Rinse the cashews and dates for the filling then add them to a blender with the rest of the ingredients except the guar gum if you are using it. Blend until smooth and creamy. With the motor running slowly rain the guar gum in until you see it thicken slightly.
If you want you can then spoon the mix into a piping bag with a decorative nozzle the place into the fridge until it has cooled then pipe into the tart shells that have been removed from the moulds.
You can also just pour the filling straight into the shells and smooth the top.
I then zested some of the raw cacao butter over the filling to decorate and add a little wow factor to it
For the larger one I added some sliced banana the zested some raw cacao butter and lemon peel over it.
