Paleo Pancakes with Blueberries, Banana and Maple Syrup

It's a cold Saturday morning, what better breakfast could you have then nice stodgy pancakes that don't make you feel sick!! Yep, these Paleo pancakes are grain free, gluten free and dairy free! I adore making pancakes for my family and it's been such a long time that they've wanted them I haven't had the pleasure standing over a nice warm stove with my GT! (green tea) on a cold winters morning.  Last Saturday they decided they decided they wanted them so I scoured the fridge and pantry and this is what I came up with... but I do have to admit we ducked down to the shop to get some Coyo (coconut yoghurt) to go with them as we where also on a mission to see what the hiking boots where like at Aldi that had gone on special that morning. Well, the hiking boots where useless, not our size and I don't think they'd have been any good so we ventured out after breakfast to find some reasonably priced and better quality foot and ankle protection for our impending adventures. 

How did the boots shopping go you ask? Well just in case you did, it went really well, we ended up with new boots (a bit more expenses but we are hopping worth it) and 2 new mountain bikes to go on the back of our new to us motorhome that we will be heading off in 2 weeks to explore Australia in. Back to breakfast, the pancakes are from a recipe I did years ago but i'll share it here again so you don't have to search for it and the rest is easy as! Enjoy! 

Paleo Pancakes with Blueberries, Banana and Maple Syrup

Makes: 6 medium sized pancakes, 3 per person makes a good hearty breakfast. 


2 ½ cups almond meal
1 tsp baking powder
4 eggs
3/4 cup coconut milk or nutmilk 
Organic butter, coconut oil or grapeseed oil for cooking


1 - 2 bananas
1 1/2 cups blueberries, frozen or fresh
Coyo yoghurt or a nice thick greek yoghurt if not dairy free
Maple syrup 

  1. Mix dry ingredients in a large spouted mixing bowl
  2. Make a well in the centre then add the eggs and milk. 
  3. Mix until smooth then let sit for 5-10mins
  4. Cook on a medium to low heat in a good pan.
  5. I used organic butter!
  6. Place one pancake each on a plate then add sliced banana, a few scattered blueberries, a dollop of Coyo and a drizzle of maple syrup. 
  7. Plane another pancakes on top and repeat the layering until you have a 3 pancakes stack. 
  8. Douse it with extra maple just before serving!

    1. Cook them slowly so that the outside does not burn leaving the center raw.
    2. If dairy free is not important to you then you could substitute a good thick greek yoghurt or a honey yoghurt for the Coyo.
    3. Agave, honey or even golden syrup would be a treat on these pancakes. 
    4. Suger Free - use Rice syrup instead of the other liquid sweeteners.
