Coral Trout with Olives, Tomatoes and Sweet Potato in a Tropical beachside location.

We're having a great time here in Tropical North Queensland. We're house sitting at Kurrimine Beach just south of Cairns. It's a little fishing town across from Dunk Island. It's quite and sleepy with one service station, 3 caravan parks and 1 pub!! Oh and a small take away pizza shop!

The weekend we arrived they had a fishing competition the owners left us with a freezer full of freshly caught Coral Trout. To our amazement and excitement they told us we could help ourselves!! Wow! we love fresh fish and miss it from our days living in Darwin where we never ate fish unless it has been caught in the last 24 hours.
